I have a Bluetooth headset for my Android phone that I use all the time. If I link the Pebble via Bluetooth, will I loose the headset function?

It all depends what version of Bluetooth you have running. As long as the phone you are using allows multiple Bluetooth items connected at the same time you shouldn't lose the connection on either of them. Also, you should be able to control the music only with the song forward and reverse. when you push and hold the play/pause button on the watch normally it switches to volume control as long as you don't have something else connected via Bluetooth that controls the volume. Is the display just black & white or does it have color?

display is black and white (e-ink) which is great because it helps the battery life last, this watch works with most smartphones with bluetooth

Does it include or is a pedometer app available that works well? Not distance measuring but actual steps?

i do not use the watch as a pedometer and i am pretty sure there is no factory setting for that but you can install an app from the store called "misfit", i have not tried the misfit app.

Will the wrist strap be long enough to fit a 7.5in (~19cm) wrist? Or about how big can the strap go?

i am pretty sure it does, i have a ~7.0 inch wrist and it works fine, also the watch straps can be changed out
