Can this be used safely with a riser desk such as VariDesk?

Before I answer, please note that I do not use my monitor mount with any sort of adjustable desk so please take my advice with that in mind... That said, the monitor stand is definitely heavy/sturdy.  I use mine to raise my two big monitors as high as possible and have had zero stability issues.  I would say that if the VariDesk is ok lifting a single monitor (without the regular base being secured to the desk), then this stand will be just as stable (maybe a tad less because of top-heaviness, but not much).

Can this old one monitor horizontal and one vertical?

Yes, but there is no way to adjust the height of the two monitors independently.

Can you turn one of the monitors to face the other way, so that one monitor would be facing you and the other one would have the back facing you?

I have not done this, and I think the stand's arms could actually articulate that way, but the stand would not be balanced properly and would fall over. When I was attaching my monitors, I had to clamp the stand to the desk until both monitors were mounted and the stand was balanced. The base of the stand is designed, I think, to have both monitors facing forward. I do think it is an excellent product, however.

can this be used for just one monitor too?

I don't think so. When I was attaching my monitors to the stand, I had to clamp the stand to the desk so it wouldn't tip over when only one monitor was attached. Otherwise, a great product.

How tall is the stand from desk to the top of the stand?

19" tall from the desk to the top of the stand.

Can you confirm that the grommet option is included with this item to bolt the stand through the desk surface?

Mine had the grommet for mounting to the desk.  I found with the monitors in the right position it wasn't needed while using 2x24" LCD's  But if you want the LCD's forward on the mount you will have to use the grommet.

Question 7

How do I tell if my current monitor is compatible with this mount (or any VIVO mount)? I don't see threads for screwing the plates onto the back of my monitor.

These appear to use standard VESA mounts - many monitors have removable plates hiding the VESA mounting points, others require an adapter. Searching for your monitor model and "VESA mount" should give you more info on the particulars of your monitor.
